Most of the harvested wasabi is used to make wasabi pickles.
The most important point is to use the clean stream water of Fuji to make wasabi pickled using wasabi grown without chemicals, with no additives.
“Additive-free wasabi pickles” are created in the course of careful selection of ingridients and and trial and error, from the sake lees that are the ingredients for wasabi pickles to the seasoning salt and sugar.
